MAKE AHEAD SNACK: Quinoa Flax Tabouleh {v+gf}


If I ever read the words, "this recipe tastes better when made ahead of time," I eagerly hold up my imaginary auction sign as high as I can . . . "SOLD!  To the lady that likes to plan ahead!"  

We all know I am a sucker for recipes I can make ahead and this one is easy peasy, healthy and delicious!  Perfect to grab and go for the office or a day outing with the fam.


My suggestion?

Make this recipe now.  Tonight, grab a nice bottle of white wine, quinoa flax tabouleh, and some cheese and crackers.  Take "your person" for a picnic to watch the supermoon ;)

INGREDIENTS

  • quinoa

  • cherry tomatoes

  • cucumber

  • red onion

  • ground flax seed

  • fresh parsley, chopped

  • garlic powder

  • lemon juice

  • apple cider vinegar

INGREDIENTS

  • 1 cup cooked quinoa

  • 2 cups cherry tomatoes, cut in half or quarters

  • 1 cup cucumber, diced

  • 4 Tablespoons red onion, diced

  • 2 Tablespoons ground flax seed

  • 1/4 cup fresh parsley, chopped

  • 2 teaspoons garlic powder

  • 2 Tablespoons lemon juice

  • 2 Tablespoons apple cider vinegar

INSTRUCTIONS

  1. Combine ingredients in a bowl.  Mix together.  

MAKE AHEAD TIP

  • This dish tastes best when allowed time to marinade.  Make a few hours ahead or the day before!
