  1. quinoa
  2. black beans
  3. cucumbers
  4. cherry tomatoes
  5. fresh cilantro
  6. cumin seed
  7. dried basil
  8. Cilantro Lime Dressing:
  • olive oil
  • white wine vinegar
  • lime
  • cilantro

spicy option: red chili pepper flakes

Mexican Quinoa Salad Bowl

SIMPLE SALAD SERIES

INGREDIENTS

  • 8 cups romaine lettuce or mixed greens kale, spinach, etc.)

  • quinoa mix

  • black bean topping

  • dressing

Quinoa Mix:

  • 1 cup quinoa
  • 1 teaspoon cumin seed
  • 1 teaspoon dried basil
  • salt and pepper (to taste - I used about 1/8 teaspoon)
  • optional: pinch of red chili pepper flakes

Black Bean Topping:

  • 1 cup black beans
  • 1 cup cherry tomatoes, cut into halves or quarters 
  • 1 cup cucumbers, chopped
  • 1/2 - 1 cup chopped fresh cilantro

Dressing:

  • 2 Tablespoon olive oil

  • 2 Tablespoon white wine vinegar

  • juice of 1 lime

  • 1/4 teaspoon fresh cilantro, chopped

INSTRUCTIONS

  1. In rice cooker or boiling water: mix quinoa, cumin seed, basil, salt/pepper, and red chili peppers (cook time: stovetop or rice cooker instructions).  Let cool. 
  2. Mix black bean topping: black beans, tomatoes, cucumbers, and cilantro.
  3. Mix salad dressing and dress greens (with desired amount).  Top with quinoa mix and black bean topping.

MAKE AHEAD TIP

  • Make quinoa mix, black bean topping, and dressing ahead of time.  Assemble when you're ready to eat!
